Hello Everyone,
We received an email this morning letting us know New Mexico green chiles were hitting the markets soon. Seems like just a few months ago I was broiling my green chiles. (It was too hot out to grill them.)
In past years, we’ve written blogs on just about everything you’ll need to know about chiles.
It’s Green Chile Time has an abundance of information about the history of Hatch chiles, choosing the chiles and preserving them for year-round use.
Chile Checklist tells you what to look for when choosing fresh chiles. It also gives a brief description of four ways to char the skins.
Roasting Green Chiles covers the outdoor grilling method in depth, which we use most often. Chile roasters are what you see outside grocery stores that offer free roasting.
Broiling Green Chiles will tell you all about the method we used last year when it was too hot to stand outside over the grill.
The above blogs also have links in them for most of the equipment you will need. You’ll also find links to reviews on vacuum sealers and ice makers.
We hope you find this helpful and as always we welcome your input.
HAPPY CHILE TIME!!
Patty & Doug
